Simple Dairy-Free Frittata

Traditional frittatas call for loads of cheese and milk, but not this one by Kat Can Cook! And it’s super simple!

INGREDIENTS
6 eggs
2 tbsp club soda
Olive oil
1 tbsp garlic
1 shallot, sliced
2 cups spinach
Salt & Pepper to taste

DIRECTIONS
Preheat oven to 375°F. Using an oven-safe pan, saute garlic and shallot until fragrant. Add in spinach and continue to cook until spinach is just wilted.

While that’s cooking, mix together the eggs and club soda. Pour egg mixture over sautéed veggies and cook for about 5 mins more until edges firm up. Transfer to the oven and cook for 15 mins or so until the center is fully firm.
