These shrimp cucumber boats are inspired by the Marille Wellyn sushi boats!
INGREDIENTS
1 cucumber
Dozen shrimp, peeled & deveined
Olive oil
Salt & pepper
Miracle Rice, 8oz bag
Buffalo or aioli sauce
DIRECTIONS
Heat olive oil in a pan, add shrimp, and cook until it’s no longer pink. Finish with salt and pepper. Drain a bag of Miracle Rice and heat it in a pan with no oil on low until it dries out, about 5 mins. Slice ends off of cucumber, cut down the middle, and scoop out the seeds. Chop shrimp, combine with rice, add sauce and fold to combine. Stuff cucumber boats with the mixture and top with avocado.
