This smoothie is not only gorgeous due to the bright pink color of the beets, but is super filling and nutrient-packed. Beets (particularly beet juice) has been known to improve cardiorespiratory fitness in athletes, so give it a try!
INGREDIENTS
1 cup water or almond milk
1 cup cauliflower
½ cup strawberry
½ frozen banana
½ cup cooked beets
¼ cup frozen coconut
2 tbsp sunflower/cashew butter
1 scoop vanilla protein
DIRECTIONS
Add liquid first followed by remaining ingredients. Blend on high for 2-3 minutes or until completely combined. Serve in a glass jar or cup.
