Nettle Bone Broth

This is a highly nourishing food at any time of day. It's important to choose 100 percent grass-fed animal bones to ensure quality and preferably wild harvested nettles, but nettle tea found in bulk works too. Nettles are high in iron, which helps build blood and nourish the cells. Bone broth mineralizes the body and is rich in essential fatty acids, which nourish the nervous system and assist the gut flora. If you don't have nettles, you can substitute spinach.

Ingredients

3 pounds of bones from a healthy pastured animal (cow, sheep, chicken, or turkey)
1 leek, roughly chopped
1 small celery root, peeled and roughly chopped
2 carrots, roughly chopped
1 onion, roughly chopped
4 whole garlic cloves
2 tablespoons apple cider vinegar
1 tablespoon lard or coconut oil
2 large bunches of wild stinging nettles-optional (if available for harvest or found at farmers markets)
1 sprig rosemary
1 bunch parsley or cilantro
3 culinary sage leaves
2 bay leaves
1 tablespoon Himalayan salt
1 teaspoon peppercorns
