I love miso because it’s delicious. But as a bonus, it’s known to promote gut health and enhance immune function. This simple, satiating soup is great as a side or appetizer. I used an InstantPot to speed things up but this could certainly be done on a stove top with a little more time.
Ingredients
Bok Choy
Mushrooms
Miso
Kimchi
Water Chestnuts
Vegetable Broth
Salt
Instructions
Chop.
Sauté.
Add broth.
Pressure cook for 6 mins.
Add Kimchi and Water Chestnuts.
Done.
