This is a kale salad that actually eats like a meal. The healthy fats in the tahini, avocado, almond butter, and walnuts paired with the fiber of kale, spinach, and celery make for a super filling salad. It’s also gluten-free, vegan, and super gut healthy. Nothing truly dirty about this salad, so make it for yourself and dig in!
1 cup dinosaur kale, stems removed, chopped
3 tsp tahini
1 cup spinach
2 tbsp chives
Salt & Pepper to taste
1/2 avocado, mashed
2 tbsp almond butter
1/2 stalk celery, chopped
2 tsp walnuts, rough chopped
1/4 cup scallions, chopped
DIRECTIONS
Drizzle kale with 1 tsp tamari and massage. Next, add spinach, chives, salt, and pepper and toss together.
In a separate bowl, mash the avocado with the almond butter and whisk in the remainder of the tamari to thin. Pour the avocado mixture over the kale and combine it with your hands to coat all.
Finally, add celery, walnuts, and scallions.
