Dairy-Free Buffalo Chicken Dip


4 skinless, boneless chicken breasts (or pulled rotisserie chicken)

1 cup raw cashews, soaked in boiling water for 20 mins

1 tbsp nutritional yeast

1 cup Primal Kitchen Foods buffalo sauce (can be found at Costco)


Chicken: Add chicken breasts to a slow cooker (with a liner) along with a cup of broth and season to taste. Cook on low for 3 hours. Shred with forks. Reserve juices.

Drain cashews, add to high powered blender with nutritional yeast, buffalo sauce and reserved slow cooker juices. Blend until completely smooth and creamy, similar to a hummus. In a large mixing bowl, combine cashew mixture with shredded chicken add additional hot sauce if needed. Then move all to an oven safe dish. Bake covered on 350 F for 20 minutes or until hot all the way through.

Serve with Siete Foods grain-free tortilla chips, celery stalks, almond or flax crackers.
