Chili
- In a large heavy bottom pot add a thin film of cooking oil.
- Once hot, add the two ground meats and cook until completely cooked through. Break up the meat as it is cooking.
- Once fully cooked, drain off the fat, add the meat back to the pot and add the onion, carrot, Fresno chili and garlic.
- Lightly season the vegetables with salt and give them a stir. Cook until soft.
- Next, add all of the spices including the bay leaves.
- Cook the spices for 5 minutes before adding the crushed tomatoes and water.
- Bring to a simmer and cook for 1.5hrs.
- Lastly, stir in the kidney beans and cook for another 30 minutes.
- Remove from heat and adjust seasoning with salt.
