Chili

INGREDIENTS


1lb beef

1lb veal

2 onions

4 carrots

5 garlic clove

1/2 Fresno chili pepper

1Tbl harissa

1/2 tbl chili powder

1/2 tbl smoked paprika

4 bay leaves

1Tbl ground cumin

1 can crushed tomato

2 can water

1 can kidney beans

Salt

Black pepper


INSTRUCTIONS

  1. In a large heavy bottom pot add a thin film of cooking oil. 
  2. Once hot, add the two ground meats and cook until completely cooked through. Break up the meat as it is cooking. 
  3. Once fully cooked, drain off the fat, add the meat back to the pot and add the onion, carrot, Fresno chili and garlic. 
  4. Lightly season the vegetables with salt and give them a stir. Cook until soft. 
  5. Next, add all of the spices including the bay leaves. 
  6. Cook the spices for 5 minutes before adding the crushed tomatoes and water. 
  7. Bring to a simmer and cook for 1.5hrs. 
  8. Lastly, stir in the kidney beans and cook for another 30 minutes. 
  9. Remove from heat and adjust seasoning with salt.
