3 cups pitted Cherries
1 red pepper
1 cucumber
1 red onion (grilled)
1pc sourdough (grilled)
1 Roasted Beet
2 garlic cloves
½ dried chili
2 mint leaves
2 basil leaves
4oz Olive oil
1 oz Red wine vinegar
Salt to taste
Combine all ingredients in a blender.
Purée until smooth.
Adjust seasoning with salt and more vinegar if necessary.
